Cucumber Keto Salad Dressing

This is a quick and easy cucumber keto salad dressing to make for dinner. It also goes beautifully with cold poached salmon, smoked salmon, or any other cold poached or smoked fish.

- 1.5lb.cucumberapprox. 2 large English cucumbers
- 2Tbsp.lemon juice
- 4Tbsp.avocado oil
- 1tsp.sea salt
- Ground black pepper
- 12fresh sage leaves
- 1oz.fresh parsley
- 1tsp.guar gum
- 2Tbsp.egg white powder
- 2Tbsp.heavy cream
Peel the cucumbers and cut them in half. Slice each half lengthwise and run a spoon down the center to remove the seeds.
Chop the cucumbers into rough chunks and put in a blender with the lemon juice, avocado oil, sea salt, ground black pepper (to taste), sage, and parsley.
Blend on high until smooth.
Turn the blender to low and, with it still running, add the guar gum, egg white powder, and heavy cream. Blend for 10 seconds.
