Caramel Macchiato Low-Carb Protein Pancakes

These low-carb protein pancakes have the sweet taste of a caramel macchiato, but without all the sugar!

Preheat a large skillet or griddle.
Add ingredients to a medium sized bowl in the order listed.
Using a stick blender, blend together until completely mixed.
Carefully pour 1/4 cup of batter onto the hot skillet or griddle and flatten slightly with a spatula. They spread so no need to flatten much.
Cook for three minutes, then flip and cook for another two on the other side.
Remove from the griddle and cover to keep warm while you cook the remaining pancakes. Serve with keto caramel syrup and other toppings if desired.
